Preferences vary, and that’s why we offer The Old Mill cheese in 4 different maturity levels: slightly ripe, medium ripe, extra ripe, and superior aged. The longer a cheese ripens, the more moisture it loses, which means the older the cheese, the drier it gets. That’s why long-aged cheese is more friable and young cheese smoother. Of course, the taste also varies. While younger cheese often has a creamier taste, it becomes more spicy and powerful the longer it ages. The choice is yours.

To make the most of The Old Mill cheese, store in a cool, dry place. Leave the cheese at room temperature for an hour before serving to bring out the flavor.
